125g butter, chopped
200g dark chocolate
3/4 cup (165g) caster sugar
2 eggs, beaten lightly
1 cup (150g) plain flour
150g white chocolate
100g milk chocolate
cocoa powder or icing sugar for dusting
1. Preheat oven to moderate. Grease a deep 20cm square cake pan, line base and sides with baking paper.
2. Combine butter and dark chocolate in large saucepan, stir over very low heat until melted. Remove from heat.
3. Stir in sugar, then eggs. Stir in sifted flour, then white and milk chocolate. Spread mixture into prepared pan.
4. Bake in moderate oven about 53 minutes or until brownie is firm to touch. Cool in pan.
5. Cut into squares. Serve dusted with sifted cocoa or icing sugar, if desired.
TIP This recipe can be made 4 days ahead. Suitabe to freeze.
